eat your vegetables

I just settled into a plateful of delicious green goodness as I wait for the second episode of Top Chef.

Sidebar: After last week, I’m fairly confident in my picks…although Preeti (yes, that’s Pree-ti, Michael Isabella. NOT “Pretty”) did give me a scare when she utterly bombed the mis en plas challenge.  Can’t wait for tonight’s show!

Since I’m enjoying my salad so much (and as proof to my mom that I’m eating good-for-you food), I thought I’d share the “recipe” with you all.

What you’ll need

  • 1 boneless, skinless chicken breast (for a lean dose of protein)
  • 1 head of Romaine lettuce (I also love a spinach, or arugula so anything that’s green will do.  Remember, the darker green the better!)
  • Handful of grape tomatoes (a cherry tomato’s Asian cousin – smaller and sweeter)
  • Cucumber for crunch (I leave the skin on for the fiber and minerals)
  • Soybeans (aka edamame…it’s hard to find these, but I bought the frozen packet and plucked them out from the pods. Yep, each and every one of them.  Now that’s cooking with TLC)
  • Crunchy sesame sticks (my local market has these deliciously sesame and savory sticks that I add but any salad topper will do)
  • Cilantro (this is optional but I decided to chop some up and and it added this amazing freshness. I’m hooked!)
  • Salt/pepper/olive oil
  • Salad dressing (I’m 100% Asian at heart and tummy so I chose a Paul Newman low fat sesame and ginger dressing – It’s great!)

What you’ll do

  • Preheat oven to 350 degrees
  • Season the chicken breast with salt/pepper, and brush with olive oil before putting it into the oven for about 10-12 minutes (or more/less depending on the thickness)
  • While the chicken is cooking, tear up your lettuce, chop the cucumber and tomatoes to your liking, and throw it all together in a bowl with the soybeans and cilantro
  • Once the chicken is done, let it sit for a minute or so and then slice it up to top your salad
  • Garnish with some sesame sticks and douse with salad dressing
  • Mix it all up and enjoy!

It’s not really rocket science, but it sure is delicious! Healthy too (see, Mom!).
